There are few ingredients that cause as much contention as mushrooms. We LOVE the versatile funghi, and think some of the hate comes from not having ever eaten them prepared properly (a little like if you’d only ever had boiled, whole Brussels sprouts 😩). One of our favorite varieties is the portobello (or portabella, if you like) for its large size, meaty texture, and its ability to be transformed into a number of delicious dishes from appetizers to hearty dinners. Whether you’re an ardent fan, or a forever hater, check out these 21 portobello recipes for ideas–they might just make you love them as much as we do.

Firstly, some portobello particulars: If you’re a frequent visitor to your grocery store’s mushroom section, you’ve probably chosen between some of the most common kinds, like white button, cremini, and portobellos (if your local store has more than these, consider yourself lucky). What you may not know is that these are actually different versions of the same mushroom, called Agaricus bisporus. Portobellos are what white button mushrooms grow into, with a stop at creminis (or baby bellas) on the way. The other thing to keep in mind about portobellos (and mushrooms in general) is that they are often very dirty when you buy them. They are also like little sponges, so you’re going to want to avoid getting them too wet lest they get soggy and mushy. Rather than dunking them in water to clean them, just give them a light rinse, or better yet, just wipe them clean in a slightly damp towel. The more you know!

Personally, we prefer creminis or big portobellos most of the time, as the white versions don’t have as much flavor as we’d like (could be a good thing if you don’t love their earthy taste though). Outside of classic mushroom dishes like green bean casserole or cream of mushroom soup, where the mushrooms get blended or hidden away, what you make with your portobellos is largely up to what size you can find and how sturdy they are. If you’ve got attractive little ones, turn ‘em into stuffed mushrooms. What you fill them with is up to you—breadcrumbs and cheese are traditional for these perfect party appetizers, but we also like fillings like crab artichoke or jalapeño poppers too. You can also stuff the big ones, like in our caprese stuffed mushrooms, but there’s an even better way to use them—treat ‘em like meat. Large portobellos are the perfect meaty substitute, particularly for summertime recipes like grilled steak or hamburgers.
